Migliaccio

Migliaccio is a Neapolitan semolina ricotta cake.

Ricotta creates a lighter, fluffier texture in comparison to a classic NY-style cheesecake. Milk infused with vanilla bean and lemon peel adds an extra layer of complexity to this simple, yet delicious, dessert.

This particular migliaccio was a practice run for my grandmother’s birthday cake.
