Farfalle with White Vodka Sauce

The vodka sauce is flavored from onions & shallots, similar to a French soubise, along weith crème fraîche, white pepper, and Parmigiano-Reggiano adding to the silky body of the sauce. Lumpfish row is used in lieu of the classic Russian “vodka and caviar” pairing, sacrificing some complexity of flavor for a much more economic dish.
